Breakfast Burritos

Ingredients

  • 4 eight inch flour tortillas
  • 1/3 cup bell pepper, chopped
  • 1/3 cup green onion, chopped
  • 1/3 cup lean ham, chopped
  • 8 or 16 oz eggs or egg substitute
  • 1/2 tsp black pepper
  • 1 cup shredded 2% cheddar cheese

Directions

  1. 1. Heat tortillas in skillet until warm, about 1 minute each. Remove from skillet and wrap in foil.
  2. 2. Spray skillet with nonstick spray.
  3. 3. Add bell pepper, onions, and ham into skillet and stir fry about 2 minutes over medium heat until vegetables start to soften.
  4. 4. Add eggs and black pepper to skillet and stir often to scramble.
  5. 5. Cook until eggs are firm and not runny.
  6. 6. Sprinkle cheese on top, cover, and turn off heat. Let stand one minute so cheese melts.
  7. 7. Spoon ¼ of mixture down center of tortilla.
  8. 8. Fold bottom up and side edges in. Repeat with remaining tortillas.
  9. 9. Serve with Zesty Sauce on the side.
