Easy Cheesy Broccoli Soup

Ingredients

  • 1/4 cup of water
  • 2 1/2 cups of frozen chopped broccoli
  • 3 Tbsp of all-purpose flour
  • 1/8 tsp of black pepper
  • 1/8 tsp of onion powder
  • 3 Tbsp of margarine
  • 2 cups of skim milk
  • 4 slices (or 3 oz) of 2% American Cheese
  • 4 drops of hot pepper sauce (optional)

Directions

  1. 1. Heat water in medium saucepan until water boils.
  2. 2. Add broccoli. Cover and boil 1-2 minutes, stirring a few times. Broccoli should be bright green and crisp-tender.
  3. 3. Turn off heat and pour broccoli onto a dinner plate or cutting board.
  4. 4. Melt margarine in same saucepan over medium heat.
  5. 5. Add flour and stir with whisk until well mixed.
  6. 6. Add black pepper, onion powder, and milk. Stir with whisk.
  7. 7. Cook over medium heat, whisking a few times, until soup is thick and bubbly, about 3-4 minutes. While soup thickens, cut broccoli into tiny pieces with knife and fork.
  8. 8. Add cooked broccoli to thickened soup and turn heat to low.
  9. 9. Add cheese slices. Cook 2 minutes, until cheese melts.
  10. 10. Optional: Add hot sauce to taste if you like.

Helpful Tips!

This soup tastes like something you would get in a restaurant! You will need a whisk to make it, though. They usually have them at dollar stores.

Nonfat dry milk powder makes for a great substitution for skim milk in this recipe. Mix it according to the directions on the package. In cooked foods like this soup, it doesn’t taste any different from liquid milk. Nonfat dry milk powder is a great shelf-stable item to keep in your pantry!
