Famous Fried Rice

Ingredients

  • 2 tsp of vegetable oil
  • 1/4 cup of onion, chopped
  • 14.5 oz can of low sodium chicken broth
  • 2 cups of instant brown rice
  • 2 cups of frozen mixed vegetables
  • 10 oz can of white meat chicken, dried

Directions

  1. 1. Put oil in large skillet. Turn on medium high heat.
  2. 2. When oil is hot, add onion and 1 tablespoon of the chicken broth.
  3. 3. Cook and stir over medium high heat until onions start to soften, about 2 minutes.
  4. 4. Add rest of chicken broth to skillet. Cover and bring mixture to a boil.
  5. 5. Add instant brown rice and stir.
  6. 6. Reduce heat to low. Cover and simmer 5 minutes.
  7. 7. Turn off heat and let stand, covered, 5 minutes, until water is absorbed.
  8. 8. When rice is ready, remove cover and fluff with fork. Turn heat on medium.
  9. 9. Add frozen vegetables and canned chicken.
  10. 10. Cover and cook 3-4 minutes, stirring occasionally, until vegetables are hot.
  11. 11. Serve with Yellow Sauce on the side.
