• 2 Tbsp of reduced fat margarine
  • 2 Tbsp of all-purpose flour
  • 14.5 oz can of low-sodium chicken broth
  • 12 oz can of evaporated skim milk
  • 1/4 tsp of onion powder
  • 1/4 tsp of black pepper
  • 1 package of ramen noodles
  • 10 oz can of white meat chicken, drained
  • 14.5 oz can mixed vegetables (drained and rinsed)


  1. Melt margarine in large microwave safe bowl for 20 seconds.
  2. Add flour. Stir with whisk until well mixed.
  3. Add evaporated milk and stir with whisk. Microwave 1 minute and then whisk.
  4. Add chicken broth, onion powder, and pepper and whisk ingredients together.
  5. Microwave about 6 minutes, whisking after every minute, until thick and bubbly.
  6. Crumble Ramen noodles. Open package and remove seasoning packet. Add noodles to broth mixture.
  7. Add chicken and mixed vegetables to mixture. Stir Well.
  8. Microwave uncovered 5 minutes. Stir, then microwave for 5 minutes. Stir, and microwave for 3 more minutes.
  9. Let sit in microwave for 2-3 minutes. Serve.
