• 1/4 cup of water
  • 2 1/2 cups of frozen chopped broccoli
  • 3 Tbsp of all-purpose flour
  • 1/8 tsp of black pepper
  • 1/8 tsp of onion powder
  • 3 Tbsp of margarine
  • 2 cups of skim milk
  • 4 slices (or 3 oz) of 2% American Cheese
  • 4 drops of hot pepper sauce (optional)


  1. Steam broccoli and ΒΌ cup water in medium microwave safe bowl for 3 minutes.
  2. Pour broccoli onto a dinner plate or cutting board.
  3. Melt margarine in same microwave safe bowl for 30 seconds.
  4. Add flour, black pepper, and onion powder. Stir with whisk until well mixed.
  5. Add milk and stir with whisk. Microwave 3 minutes and then whisk.
  6. Microwave again for 3 minutes and then whisk.
  7. Continue microwaving until soup is thick and bubbly, about 1-2 minutes.
  8. While soup is cooking, cut broccoli into tiny pieces with knife and fork.
  9. Add cooked broccoli and cheese slices to the thickened soup.
  10. Microwave 1 minute, until cheese melts. Stir well to mix in cheese.
  11. Add hot sauce to taste if you like.
