Ingredients

  • 6 oz of soy crumbles
  • 1/2 cup of onion, chopped
  • 1/2 cup of bell pepper, chopped
  • 1 tsp of vegetable oil
  • 15 oz can of low-sodium diced tomatoes, undrained
  • 1 1/4 cup of water
  • 1/2 tsp of chili powder
  • 1/2 tsp of oregano
  • 1/2 tsp of sugar
  • 4 oz of spaghetti, crumbled
  • 1/2 cup of shredded 2% mozzarella cheese

Directions

  1. Put onion, bell pepper, and soy crumbles in a large, microwave safe bowl. Add oil and stir.
  2. Heat 3 minutes and stir.
  3. Add tomatoes with liquid, water, chili powder, oregano, sugar, and spaghetti and stir together. Push noodles down into the liquid, making sure they are covered with liquid.
  4. Heat 5 minutes and stir.
  5. Push noodles down into liquid and heat another 5 minutes.
  6. Stir then heat again for 4 minutes.
  7. Sprinkle cheese on top. Microwave for 30 seconds, until cheese is melted.
