Ingredients

  1. 1 tsp of vegetable oil
  2. 12 oz package of soy crumbles
  3. 1 whole onion, chopped
  4. 14.5 oz can of low-sodium black beans*
  5. 14.5 oz can of low sodium kidney beans*
  6. 14.5 oz can of low-sodium great northern beans*
  7. 14.5 oz can of crushed tomatoes
  8. 1 can full of water
  9. 8 oz can of tomato sauce, no salt added
  10. 2 Tbsp of chili powder
  11. 2 tsp of garlic powder
  12. 1 tsp of black pepper
  13. 1 tsp of crushed red pepper flakes

*drained and rinsed

Directions

  1. In a large microwave-safe bowl, add onion, vegetable oil, and soy crumbles.  Heat in the microwave 4 minutes.
  2. Add beans and mix well.
  3. Add crushed tomatoes, tomato sauce, water, and spices. Mix well.
  4. Heat for 3 minutes and stir.
  5. Cover with plastic wrap and heat for 5 minutes.
  6. Uncover and stir.
  7. Heat for 3 more minutes. Mixture will be very hot, let sit for few minutes before serving.
