Ingredients

  • 2 medium yellow squash, chopped
  • 2 medium zucchini, chopped
  • 14.5 oz can stewed tomatoes
  • 1 green pepper, diced
  • 1 lb ground turkey
  • ½ tsp ground pepper

Directions

  1. In a medium microwave safe bowl add ground turkey. Heat in microwave for 3 minutes. Stir and heat again for 3 minutes. Stir and heat for 2 additional minutes
  2. Remove from microwave and drain liquid from the turkey.
  3. In a large microwave safe bowl add chopped squash, zucchini, and green pepper. Cover and Heat for 3 minutes. Stir and heat another 3 minutes. Vegetables should be slightly soft.
  4. Add whole can of stewed tomatoes, and pepper. Add meat back in and mix well.
  5. Heat for 2 minutes. Stir and heat again for 2 minutes. Vegetables should be soft and mixture will be very hot. Let sit in microwave for 2 minutes before serving.
