Skillet Mac and Cheese

Ingredients

  • 1 tsp of vegetable oil
  • 1 tsp of dry mustard
  • 1/4 cup of onion, minced
  • 2 Tbsp of green bell pepper, minced
  • 1 1/2 cup of water
  • 2 cups of uncooked elbow or shell macaroni
  • 1 cup of broccoli florets, chopped
  • 1/2 cup of nonfat plain yogurt
  • 1/2 cup of low-fat sour cream
  • 2 cups of shredded 2% cheddar cheese

Directions

  1. 1. Heat oil on medium heat in nonstick skillet.
  2. 2. Add dry mustard and blend.
  3. 3. Add onion and green bell pepper. Cook until tender.
  4. 4. Add 1½ cups water. Cover and bring to a boil.
  5. 5.  Add 2 cups uncooked macaroni.
  6. 6. Reduce heat to medium. Cover and simmer for 10 to 15 minutes or until macaroni is tender. Stir occasionally.
  7. 7. Add broccoli.
  8. 8. Stir yogurt and sour cream into skillet with cooked macaroni and broccoli, mixing well.
  9. 9. Cover, reduce heat to low, and simmer for 5 minutes.
  10. 10. Remove lid. Top macaroni mixture with shredded cheese.
  11. 11. Replace lid and allow cheese to melt for 5 minutes.
  12. 12. Remove from heat. Serve.

When buying yogurt, be sure you are getting nonfat or low-fat yogurt. Regular yogurt has over 10 times more fat than nonfat yogurt. Nonfat yogurt has the same amount of calcium as regular yogurt, but without the added fat and calories.
