Skillet Spaghetti

Ingredients

  • 6 oz of soy crumbles
  • 1/2 cup of onion, chopped
  • 1/2 cup of bell pepper, chopped
  • 1 tsp of vegetable oil
  • 15 oz can of low-sodium diced tomatoes, undrained
  • 1 1/4 cup of water
  • 1/2 tsp of chili powder
  • 1/2 tsp of oregano
  • 1/2 tsp of sugar
  • 4 oz of spaghetti, crumbled
  • 1/2 cup of shredded 2% mozzarella cheese

Directions

  1. 1. Sauté soy crumbles, onion, and bell pepper in oil.
  2. 2. Add undrained tomatoes, water, chili powder, oregano, and sugar. Bring to a boil.
  3. 3. Crumble spaghetti. Add to the skillet.
  4. 4. Cook covered until noodles are tender, about 9-10 minutes, stirring every few minutes.
  5. 5. Sprinkle cheese on top. Cover and heat until cheese is melted, about 1-2 minutes.

This recipe uses soy crumbles, but you can use ground turkey or beef instead. Soy crumbles are a good alternative to traditional meats because they are a good source of protein and have less fat than ground meat.
