Fiesta  Quesadillas

Ingredients

  • 1 cup diced red or green bell pepper
  • 1 cup diced zucchini
  • 15 oz can pinto beans, no salt added – drained and rinsed
  • 8 8″ flour tortillas
  • 1 cup shredded 2% cheddar cheese

Directions

  1. Rinse beans and transfer to plate. Mash beans with fork.
  2. Heat one tortilla in a nonstick skillet or skillet sprayed with nonstick spray.
  3. Cook on medium heat for 2-3 minutes or until bottom of tortilla is crisp and light brown.
  4. Flip tortilla and spread 2 Tbsp of beans on one half.
  5. Top with 2 Tbsp of the pepper and 2 Tbsp of the zucchini.
  6. Sprinkle with 2 Tbsp of cheese.
  7. Fold plain side of tortilla over side with vegetables using a pancake turner and remove from skillet.
  8. Repeat with rest of tortillas, and serve with Ranch Sauce and Zesty Sauce on the side.

Helpful Tips!

Choose whole wheat tortillas, which are higher in fiber and lower in sodium than white flour tortillas.

The peppers and zucchini add color and crunch to these quesadillas! At home, you can try adding other vegetables to your quesadillas. Raw or sautéed vegetables are a great option to color your quesadillas healthy!
